●What is an oshiki? An oshiki is a tray that has no legs and is used exclusively for banquets (kaiseki) and does not have high edges.
The "orishiki" that the host hands to the guest has three dishes placed on it: "mukouzuke" in the center, "soup" on the front right, and "rice" on the front left.
In a tea ceremony, the edges of the "orishiki" are used in a way that is not the case with a tray.
At the start of a kaiseki meal, chopsticks are placed on the right edge of the orishiki so that they can be easily picked up.
